These little ‘lunch boxes are the cutest thing this year. They are called Bento boxes and are washable-reusable and fun for adult kids like myself who love little things like this.

Recently, I was told by my trainer and nutrition godess with a small ‘g’ that I should start cooking Tofu for meals to slim down even faster than I am, for my upcoming project…

Tofu Curry
1 block Extra firm tofu – cubed
olive oil
1 medium onion – chopped
Raisins
Curry Powder
Water
Lemonaise (fake mayonnaise-as we don’t eat miracle killer whip)
“Chutney” Ingredients
Applesauce
Rice Vinegar
Lemon juice
Honey
Salt and Pepper
Fresh ginger – minced
Heat pan to medium to high heat and add tofu – brown. Turn heat to medium and add onions and raisins. When onions are clear, add water to plump raisins; I do this to make them easy for my son to eat, but you could skip the simmering by adding less water. Blend the chutney ingredients together, adjust amounts to taste; add to tofu. Reduce then remove from heat. Add Lemonase; serve. Enjoy!
