Healthy Pumpkin Pie????

The day after Thanksgiving

Just in time for Turkey Day!!!!

(A typical slice of pumpkin pie contains over 200 calories, mine contains only 66, so TRUST ME, you can afford to indulge on this one!!!!)

You will need;

* 1 (one) 15oz can of pumpkin **make sure this is REAL pumpkin, not pumpkin pie filling**
* 8 ounces skim milk
* 3 egg whites
* 3/4 cup Splenda baking substitute or 3/4 cup powdered Stevia
* Pumpkin pie spice to taste
* 2/3 reduced fat graham cracker crust (remove the sides from the crust and discard)
* 2 egg whites for the crust

Directions;

1. Preheat the oven to 425 degrees
2. Mix pumpkin, milk, and egg whites until smooth.
3. Gradually stir in splenda or stevia 1/4 cup at a time.
4. Add pumpkin pie spice, taste, and add more if you like
5. *** Before you pour mixture into the crust, prep the crust as follows; Brush the crust with 2 egg whites and bake at 350 degrees for about 5 minutes. This prevents the crust from getting soggy when baked with the pie mixture***
6. Bake the pie in the oven for 15 minutes, then reduce the temperature to 350 degrees and continue to bake for another 45 minutes (bear in mind your baking time may vary depending on your oven.)
7. Let cool and serve

Sugars: >6g (only the naturally occuring sugars in the pumpkin)
